  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 2 cups mixed veggies (bell peppers, broccoli, snap peas)
  • 3 tbsp soy sauce (or tamari for a gluten-free option)
  • 1 tbsp sesame oil
  • 1 garlic clove, minced
  • Cooked rice or noodles for serving

Instructions

  1. Coat Tofu:
    Begin by coating the cubed tofu in cornstarch. This step is crucial for achieving a crispy texture when frying.
  2. Fry Tofu:
    Heat the vegetable oil in a pan over medium-high heat. Once the oil is hot, add the tofu cubes. Fry them until they become golden and crispy, then remove them from the pan and set aside.
  3. Stir-Fry Vegetables:
    In the same pan, add the mixed veggies. Stir-fry them for 3-4 minutes until they are tender but still crisp.
  4. Add Garlic:
    Add the minced garlic to the pan and stir for about 1 minute until fragrant.
  5. Season:
    Stir in the soy sauce and sesame oil, ensuring the vegetables are well-coated with this delicious mixture.
  6. Combine Ingredients:
    Return the crispy tofu to the pan, mixing well with the vegetables. Allow the tofu to heat through for a couple of minutes.
  7. Serve:
    Serve the crispy tofu stir-fry over cooked rice or noodles for a complete meal.
