Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, beat the butter and powdered sugar until creamy.
- Add peppermint extract and mix well to incorporate the flavor.
- Gradually stir in cocoa powder, flour, and salt until combined. The dough should be smooth and manageable.
- Roll dough into small balls and flatten them slightly. Place on a lined baking sheet to ensure they don’t stick.
- Bake for 10-12 minutes. Let the cookies cool on a wire rack.
- Melt dark chocolate chips in a microwave or double boiler. Dip each cookie into the melted chocolate, then allow them to set on parchment paper.
