Homemade Thin Mint Cookies Recipe

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 1/2 cup unsweetened cocoa powder
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, beat the butter and powdered sugar until creamy.
  3. Add peppermint extract and mix well to incorporate the flavor.
  4. Gradually stir in cocoa powder, flour, and salt until combined. The dough should be smooth and manageable.
  5. Roll dough into small balls and flatten them slightly. Place on a lined baking sheet to ensure they don’t stick.
  6. Bake for 10-12 minutes. Let the cookies cool on a wire rack.
  7. Melt dark chocolate chips in a microwave or double boiler. Dip each cookie into the melted chocolate, then allow them to set on parchment paper.
